The Projects area under an asset is for planning out and managing projects that are to do with that asset.
You can also use this area as a kind of sketch pad for drawing out what will be involved in a project, the tasks and the task breakdown. It also provides an area that lets you upload quotes (go to the hamburger button, and click Quotes), if the project will be outsourced to others. Combined with time estimates and costing, you can get a clear idea of how much a project will cost and how long it will take.
When you're ready you can then create work orders directly from the planned tasks (click the task, then click Create Work Order), and it will send the work orders either to the assigned users or to the asset supervisor. As the work orders are completed, it will complete the task in your project list.
You can also multi-select tasks, and create all the work orders at the same time.
If you don't want to create a work order, you can also set the task as complete - which makes it gray out and go to the bottom of the list.
Incidentally, as well as being under an asset, there is also a Planning tab in the main application for top-level projects you may want to plan out.
